Cinnamon & Cassia

Cinnamon and Cassia arefrom the bark of evergreen trees from Asia.

Cinnamon is a lighter brown in colour and sweeter than Cassia. Cassia makes up 90% of the "Cinnamon" in the US market.

Cinnamon has various medical properties helping to regulate blood sugars , anti-clotting abilities and anti-oxident properties that aid fighting of bacterial and fungal infections.

Cinnamon and Cassia are commonly used in both sweet and savoury foods.

Nutmeg & Mace

Nutmeg and mace are from an evergreen tree producing a nutmeg fruit. The Nutmeg seed is coated by a layer of Mace. Once dried they can be separated and ground separately .

Used in cooking, Nutmeg and Mace can be substituted in small amounts infusing the spice with milk or creamy sauces.

Mace has the sweeter perfume and a flavour combining cinnamon and pepper.

Mace is commonly used in a range of spice mixes.
